After 14 years as a gluten free family with 3 celiacs, we heard about "einkorn flour" in the book "Wheat Belly" and decided to give it a try. With great skepticism, we ordered 2 pounds and made a batch of chocolate chip cookies we hadn't made for almost 15 years!
We waited for the pain, bloating, and discomfort of a wheat reaction to come, but it never did! It was a miracle, we could have real bread products again! Einkorn flour officially changed our lives!
Unfortunately, that also meant that we had to continue making everything from scratch. When our son was 2 years old, he started presenting with a much more severe wheat allergy and we had to completely cut out anything that wasn’t einkorn flour for our wheat products.
Knowing that he would only be able to have cookies, cakes, or bread if I made them from scratch was quite difficult for me. There were no shortcuts.
And even though I love cooking from scratch, trying to do that on top of having a full time job and a homestead to run was too much at times.
I knew there had to be a better way.
So, after 8 years (and 16 millions readers) I've expanded my business from just sharing einkorn recipes, to actually bringing them to life! We now run the first fully einkorn & organic bakery and restaurant in the world!
